Please remember that our meat is seasonal due to our fresh grass-finishing process which provides peak meat quality and flavor. Grass is greenest and healthiest in summer, and thus, our meat will be ready for processing by June, but we encourage that you book with us and our processor early to ensure that you get the dates you want yours to be finished.
